I love a good salad. Lately, I’m obsessed with putting pickled banana peppers on my cobb salads. So good. But did you know pomegranate seeds are great to toss on a salad too? I made this apple pomegranate salad after seeing it on ‘asimplepalate.com ‘via Pinterest, and it is… so good. And equally beautiful. No expensive cameras or filters were used in taking the pic of my salad above. Some may consider this a ‘seasonal’ salad, suited best for a thanksgiving gathering or such. But I just made this salad a few months post said season, and it was everything so.
I stopped by Whole Foods on my way home from work this past Friday for the pomegranate seeds. Surprisingly, the signs of quarantine panic were minimal. I already had a bag of chopped pecans at home. I also already had the apples at home. Honey-crisp is my favorite kind of apple. The dressing to pair is lovely. It’s five ingredients: olive oil, balsamic vinegar, honey, black pepper, and garlic powder. So, just in case you need salad inspiration while on lockdown, here you go! Stay safe and healthy! Xo
SALAD:
- 1 cup pomegranate seeds
- One honey crisp apple sliced thin
- 1/4 cup chopped pecans or walnuts
- 2-3 tbsp feta cheese
- Mixed greens
DRESSING:
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 3 tbsp honey
- 1/2 tsp black pepper
- pinch of garlic powder
